Healthy Recipes for Football Vegetarians

Touchdown Vegetarian Guacamole and Chips

  • 4 ripe avocados
  • 1 cup chopped fresh cilantro
  • 2 jalapeno peppers
  • 2 tablespoons of lime juice
  • 1 teaspoon of lemon juice
  • 1 bag tortilla chips

Peel and seed the avocados. Place them in a mixing bowl and smash with a fork. It’s not necessary to blend them into a paste, unless that’s the texture that you are looking for. Chop the 2 jalapenos very finely and add to the smashed avocados. Add the lemon juice and mix. The lemon juice will help to maintain the bright green avocado color as not having it causes the mixture to turn an ugly brown color when exposed to air. Add the remaining ingredients and mix. Refrigerate until served. Place chips near guacamole mixture prior to serving. The amount of guests that this amount will serve varies with the size of the avocados. Typically I can get at least twelve servings out of it.

Super Bowl Hummus Pizza with Red and Green Roasted Peppers

  • One 8 ounce container of premade red pepper hummus
  • 2 ripe red peppers, seeded and chopped
  • 1 green pepper, seeded and chopped
  • 1 cup of cheddar cheese
  • 1 premade whole wheat pizza crust

Spread the contents of the premade hummus container onto the premade pizza crust. Sprinkle the chopped peppers and cheese on top of the hummus. Cook the pizza per the directions on the crust container. The usual yield is approximately eight pieces of pizza. Serve hot or room temperature.

Field Goal Olive and Mozzarella Salad

  • One 8 ounce container of fresh mozzarella balls
  • One 8 ounce container of fresh olives, pitted
  • 1 half cup of chopped fresh basil
  • 1 ½ cups of red cherry tomatoes
  • Olive oil
  • Pepper to taste

Combine all ingredients into a serving bowl. Cover with enough olive oil to coat the mixture. If there is too much, it will drain to the bottom. Add pepper to taste if desired. Refrigerate until served. This dish serves approximately 8 guests.
